Beef and Vegetable Stew



Ingredients:







- 1.5 lbs (680g) beef stew meat, cubed

- 2 tablespoons olive oil

- 1 onion, diced

- 2 cloves of garlic, minced

- 2 carrots, peeled and sliced

- 2 celery stalks, sliced

- 2 potatoes, peeled and cubed

- 1 can diced tomatoes

- 4 cups beef broth

- 1 teaspoon dried thyme

- 1 teaspoon dried rosemary

- Salt and pepper to taste

- Chopped fresh parsley for garnish (optional)



Instructions





1. Heat olive oil in a large pot or Dutch oven over medium heat.

2. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside.

3. In the same pot, add the diced onion and minced garlic. Sauté until the onion becomes translucent.

4. Add the carrots, celery, and potatoes to the pot and cook for a few minutes until slightly softened.

5. Return the beef stew meat to the pot and stir in the diced tomatoes, beef broth, dried thyme, dried rosemary, salt, and pepper.

6. Bring the stew to a boil, then reduce the heat to low, cover, and simmer for about 1.5 to 2 hours, or until the meat is tender and the flavors have melded together, stirring occasionally.

7. Taste and adjust the seasoning if needed.

8. Serve the stew hot in bowls, garnished with chopped fresh parsley if desired.
